Spicy Pear Chutney

3 1/2 cups peeled and diced pears (3 to 4 medium)
2 Tbsp. lemon juice
2 Tbsp. chopped fresh cilantro leaves
1 clove fresh garlic, minced
1/2 cup chopped red onion
1 1/2 tsp. sugar
1/8 tsp. ground red pepper

In a small bowl, combine all ingredients, mixing well. Cover and refrigerate at least 2 hours before serving.

Makes 8 servings.

Per serving: 51 calories, 0 g total fat (0 g saturated fat), 13 g carbohydrates, <1 g protein, 2 g dietary fiber, 1 mg sodium.
